Nana's Zucchini Bread
3 eggs 3 cups flour
2 cup oil 1 tsp. salt
2 cups sugar 1 tsp. baking soda
2 cups zucchini (grated) 3 tsp. cinnamon
3 tsp. vanilla 1/2 tsp. baking powder
Preheat oven to 325 degrees
Grease and lightly flour 2 loaf pans
Beat eggs lightly.
Add oil, sugar, zucchini and vanilla to the eggs
Mix lightly, but make sure it's combined
Add flour, salt, baking soda, cinnamon and baking powder
Mix well
Divide the batter evenly between the two loaf pans (or three small loaf pans)
Bake 45-60 minutes
